Ice Cream Desserts #NationalIceCreamDay

If you didn’t already know, today is National Ice Cream Day! If today isn’t an excuse to eat your weight in ice cream then we don’t know what is; we are certainly taking advantage of this opportunity. We have put together a few recipes to really help you celebrate in the most delicious way.

Ice-Cream-SandwichWhat to do:
– If your using shop bought cookies, simply spoon out or slice a large dollop of ice cream and put it on top of the flat side of the cookie. Place another cookie on top and ta da – an ice cream sandwich
– If you are making your own, it is vital that you slightly under-cook the cookies by around 3-5 minutes to ensure they are soft and gooey. Take them out the oven and allow to cool for 5 minutes before quickly smothering a cookie with ice cream and placing another on top – repeat, and have another!


Caramel-Apple-SundaeWhat to do:
– Add 2 tbsp. butter to a pan and melt over a medium heat. Add the apples and saute for around 5 minutes, remove from the heat and set the apples to one side
– Put the brown sugar and the remaining butter into a pan over a medium heat and stir until the butter melts and the sugar dissolves, then pour in the cream
– Stir and let it thicken up for around 1 minute
– Turn down the heat to low and add the apples, sprinkle in the cinnamon and stir until it thickens for another 1-2 minutes
– Scoop big scoops of vanilla ice cream in to a sundae glass and drizzle over the sweet and sticky caramel apple sauce.


Ice-Cream-CakeWhat to do:
– Remove the ice cream from the freezer to allow it to soften
– Make the chocolate ganache. Place the chopped chocolate in a heat safe bowl. Heat the cream in a small saucepan over a medium-low hear and bright to a slight simmer. Pour the hot cream over the copped chocolate and stir well, allow to cool
– Put the bottom layer of the cake on a flat surface (or fit in a spring form pan). Spread 1/3 of the ganache on top of the cake, smoothing down with a spoon. Chill in the fridge for 10-15 minutes
– Once cool, spread the softened ice cream on top of the ganache and smooth – top with sprinkles and pop in the freezer for about 15 minutes
– Place the middle layer of the cake on top of the ice cream and repeat – place the top layer on top of the last layer of ice cream and cover in cling film and freeze over night
– Top with extra ganache and sprinkles and serve using a metal knife which has been run under hot water to help slice the cake! Enjoy!



What to do:
– In one large bowl, or two smaller bowls lay down the sliced bananas
– Cover with scoops of ice cream and drizzle with hot fudge sauce and strawberry sauce
– Top with whipped cream and sprinkle with nuts and sprinkles
– Place the glace cherries on top and get stuck in!
